Pineapple Upside Down Mug Cakes

Serves: 2 mug cakes
 
Ingredients
  • ¼ cup crushed pineapple in juice
  • 2 tablespoons light brown sugar, firmly packed
  • ½ cup dry yellow cake mix
  • 1½ cups Reddi-wip Original Dairy Whipped Topping
  • 1 egg
  • 1 maraschino cherry, cut in half
Instructions
  1. Spray the insides of 2 large microwave-safe mugs with cooking spray.
  2. Divide the crushed pineapple between the mugs.
  3. Dive the brown sugar between each mug. Set the mugs aside.
  4. Mix together cake mix, Reddi-wip, and egg in a medium bowl. Divide batter between the two mugs.
  5. Individually, microwave each mug on HIGH for approximately 1 minute 15 seconds to 1 minute 30 seconds until set - being careful not to overcook or they will become spongy.
  6. Remove from microwave and loosen around the edge with a butter knife. Then invert onto a plate. Do this for both mugs.
  7. Top each cake with a cherry.
  8. Serve while warm with additional Reddi-wip on the side, if desired.
  9. Enjoy!
Notes
Store unused dry cake mix in baggie or sealed jar for fun desserts later!
