Stuffed Pepper Jack-o-Lantern

Ingredients
  • 5 Peppers (orange, yellow, green, or red)
  • 1 box Rice-a-Roni Spanish Rice
  • 14.5 oz. can Hunt’s Stewed Tomatoes
  • 2 tbsp. Unsalted Butter
  • 1 lb. Ground Beef
Instructions
  1. Stirring and chopping frequently, cook ground beef at medium heat on stovetop for 18 to 20 minutes or until cooked through. If desired, add diced red onion to beef and sauté for 5 to 8 minutes. Remove from heat.
  2. Following the step-by-step directions on your Rice-a-Roni Spanish Rice box, combine rice and butter. As directed, cook on stovetop until golden brown. Add water (2 cups), seasoning, and stewed tomatoes to stovetop. After brought to a boil, cover stovetop pan and reduce heat to low for 15 to 20 minutes.
  3. Cut an inward circle at the top of each pepper. Holding the stem, pull the top from each pepper. Set aside. Carefully pit each pepper and remove seeds. Rinse inside of each pepper. Pat dry.
  4. Using a small kitchen knife (or you can use an X-ACTO knife), carefully cut out triangular eyes and a nose, and a crooked mouth (or whatever face you desire).
  5. Stuff each pepper with Rice-a-Roni Spanish Rice (with beef).
  6. Serve with lid on top or at side. Enjoy!
