Homemade Apple Pie

- 6 cups peeled and thinly sliced Granny Smith apples
- ½ cup sugar
- ½ cup packed brown sugar
- 3 Tbls. all-purpose flour
- 1 tsp. ground cinnamon
- ¼ tsp. ground nutmeg
- 1 tablespoon lemon juice
- Double-crust pie pastry (9 inches)
- 1 Tbls. butter
- Sugar for sprinkling
- Preheat oven to 350 degrees.
- Peel and thinly slice apples.
- Using a small bowl, combine the sugars, flour, cinnamon and nutmeg. Set aside.
- Add the apple slices into a large bowl and sprinkle the lemon juice on top.
- Stir and combine well.
- Add sugar mixture and toss to coat.
- Line the bottom of a 9 or 9½-inch pie plate with one of the pie pastries.
- Pour the apple mixture into the prepared pie plate.
- Dot the mixture with pieces of the butter.
- Add the remaining pastry to the top of the filled pie crust.
- Tuck the edges and seal and flute edges. Cut 4 - 1-inch slits in the top of the pastry.
- Sprinkle with a pinch of sugar.
- Place foil around the edges of the pie crust.
- Bake at 350° for 25 minutes and then remove foil.
- Bake approximately 25-30 minutes longer, or until crust is golden brown.
- Cool on a wire baking rack.
- NOTES: Wait until cool and set to cut for serving.
