Cheesy Crock Pot Potato Soup

Ingredients
  • 5 cups diced peeled potatoes (I used 6 medium potatoes)
  • 1½ cups chopped onions
  • 1 carton chicken broth (32 oz carton or 4 cups)
  • 3 Tbls. cornstarch
  • 6 slices American cheese
  • 3-4 green onions, optional for topping
  • shredded cheddar cheese, optional for topping
  • 1 Tbls. salt, or to taste
  • ¾ tsp pepper, or to taste
Instructions
  1. Spray crock pot with cooking spray.
  2. Dice potatoes and onions and add to crock pot.
  3. Add chicken broth, reserving ¼ cup. Cover and refrigerate to use later.
  4. Cover crock pot with lid and cook on LOW for 8 hours.
  5. Increase the heat setting to HIGH.
  6. Using the reserved ¼ cup of chicken broth, beat in cornstarch until smooth. Add to the crock pot and stir well. Cover and continue cooking another 15 minutes or until thickened.
  7. Tear cheese slices into squares and stir into the potato mixture until well melted.
  8. Serve with a sprinkle of green onions and shredded cheese if desired.
  9. Serve with your favorite crusty bread or crackers.
Notes
Like bacon? Crumble some cooked bacon on top, along with the green onions and shredded cheese.
