Avocado Pesto Pasta Recipe
As a Good Cook Blogger, am received a great set of kitchen tools to create an amazing avocado recipe. I quickly put my thinking cap on and came up with what I think is a pretty amazing, tasty and healthy recipe for Avocado Pesto Pasta.
I was excited when my handy tools arrived. My kitchen set (pictured below) included:

Once they arrived, I got to work creating an amazing and tasty avocado dish for my family. We absolutely love pasta of all sorts and it was very easy to come up with a zesty sauce for my pasta. Here is the recipe for you to try for yourself.
- Avocado Pesto Pasta Recipe
- 1 lb Fettuccine Noodles
- 2 Avocados (peeled and pitted)
- 1/2 cup virgin olive oil
- 1 small bunch of fresh basil
- 2 cloves fresh garlic
- Salt & pepper, to taste
- 1/3 cup cashew nuts
- Peeled/cooked shrimp (optional) or broiled chicken (diced or cubes, also optional)
Place water in a pot with a pinch of salt & some cooking oil (this prevents the noodles from sticking) and bring to a boil.
Add noodles to water as instructed on the box and boil until cookied.
While noodles are cooking, put the remaining items (minus the shrimp or chicken) into a blender or food processor and mix well until a creamy base.
Once your sauce is creamy enough, mix with the cooked pasta noodles and garnish with some freshly grated Romano cheese. You can also add the cooked shrimp or chicken to make it a complete meal.
