Homemade Chocolate Cookie Cream Sandwiches Recipe
Ingredients:
- 1/2 cup (1 stick) – butter
- 1/2 cup – granulated sugar
- 1/2 cup – light brown sugar
- 1 large – egg
- 1 tsp – vanilla extract
- 1/4 tsp – salt
- 1 1/2 cups – all-purpose flour
- 6 tbsp – unsweetened cocoa powder (I used Hershey’s)
- 1/2 tsp – baking soda
Prep & Directions
Heat oven to 350 degrees F
In a large mixing bowl, add the butter, brown sugar and white granulated sugar. Mix on medium speed until creamy & smooth
In the same bow, add the egg, vanilla extract and salt, continuing to mix at medium speed until completely blended
In a separate bowl, combine the flour, cocoa powder and baking soda with a whisk (15-20 strokes).
Back to the bowl with the wet ingredients, slowly add the dry ingredients until blended completely. It may become thick and even crumble, but will mesh together once you ball and put them on the cookie sheet.
Using a cookie scoop or hands, place balled cookie dough onto a large cookie sheet (I used my Good Cook Large Cookie Sheet, I can make more cookies in less time).
My favorite item to help me put cookies on the sheet is the Good Cook Stainless Steel Cookie Dropper
Bake 9 to 12 minutes or until the cookies have puffed up at the top.
Cool cookies. Once cooled, add a spoonful of buttercream icing in between two cookies and make the tastiest chocolate cookie cream sandwich ever. I recommend eating with a tall, cool glass of milk.
