Homemade Chicken Pot Pie

INGREDIENTS:

Crust:

2 cups all-purpose flour
1 tspn salt
3/4 cup shortening
6 Tblspn cold water

Filling:

1 whole chicken
1/2 cup butter, divided
1/2 cup all-purpose flour
1 tspn salt
pepper to taste
3 cups chicken broth
1/4 cup finely chopped onion
1/2 an onion
carrots, 2 whole and 2 cut into bite size pieces
4 stalks celery, 2 whole and 2 cut into bite size pieces
2 potatoes peeled and cut into bite size pieces

In a medium bowl, combine 2 cups flour and 1 teaspoon salt.  Cut in shortening until mixture is crumbles.  Add in 6 tablespoons cold water and mix until a ball forms.  Divide dough in half and shape into two balls.  Wrap dough balls with plastic wrap and place in refrigerator for at least four hours.  Can be left overnight.

Place whole chicken, 2 carrots, 2 celery stalks, 1/2 onion and salt and pepper to your liking.  Cover with water and simmer until chicken is falling apart.  Remove chicken, discard veggies.  Save 3 cups broth for the filling.  When chicken has cooled, pull off all meat, cut into bite size pieces and set aside.

Place cut carrots, cut celery and cut potatoes into a pot, cover with water, add a dash of salt and boil just until they start to become tender.  Drain.

Preheat oven to 400 degrees.

Roll one dough ball out to fit a 9 inch pie plate.  Place in bottom of plate.  Place in preheated oven until lightly browned.  Only a few minutes! Remove from oven.  Set aside.

In a good sized frying pan, melt 2 tablespoons of the butter.  Cook finely chopped onions until translucent.  Add the remaining butter.  When all butter is melted, slowly blend in 1/2 cup all-purpose flour, 1/2 teaspoon salt and pepper.  Gradually stir in 3 cups chicken broth.  Cook, stirring constantly until it becomes smooth and thickened.  Stir in chicken, slightly cooked carrots, celery and potatoes.  Mix well.  Spoon mixture onto the bottom crust.  Roll out other dough ball and cover the pie.  Seal the edges and make several small slits in the top crust.  Bake in preheated oven for 30 minutes or until golden brown.

I always have mixture leftover which my kids love to eat!
