1 glove garlic (thinly sliced)
¾ cup of dry wine
¼ cup thoroughly grated parmesan cheese
Salt and Pepper (to be added at your own liking)
Instructions:
- Boil 2 cups of water and the quinoa seeds together in a saucepan for approximately 10-15 minutes. Stir the seeds once in a while.
- While waiting, heat the olive oil in a pan at medium heat.
- Stir the garlic, to be followed by the carrots, kale, mushrooms, and potatoes. Toss the vegetables until slightly cooked.
- Add the wine, salt and pepper to taste. Toss until vegetables are tender.
- Serve the cooked quinoa together with vegetables and sprinkle Parmesan cheese on it.
