Pumpkin Vanilla Chip Cookies

Warning:  These are “cake-like” cookies!!

Ingredients:

1/2 cup butter, softened
1 egg
15 ounces canned pumpkin (1 can)
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. cinnamon
1/4 tsp. pumpkin spice
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 to 1 1/2 cups vanilla chips

Directions:

Preheat oven to 375.

  • Cream butter and egg until smooth.
  • Add pumpkin and vanilla.  Mix well.
  • Add sugar.  Mix well.
  • Add flour, cinnamon, pumpkin spice, salt, baking powder and baking soda.  Mix well.
  • Add vanilla chips and mix.

Drop by spoonful onto ungreased cookie sheet.   Bake in preheated oven for 11 to 13 minutes, or until firm.  Remove from oven, cool on rack.
