Artichoke Spinach Lasagna
1 can 14oz vegetable broth
italian seasoning
1 14oz can artichoke hearts,drained and chopped
1 9oz box frozen chopped spinach,thawed and drained
1 15 oz jar classico light creamy alfredo sauce
9 uncooked lasagana noodles
1 8oz package low mositure part skim shredded mozzarella
1 8oz package reduced fat shredded cheddar
Directions:
1) heat oven to 350, spray 13×9 glass dish with cooking spray
2) In large skillet add vegetable broth and sprinkle with italian seasoning. Heat to boil, stir in artichoke hearts and chopped spinach. Reduce heat and cover. Simmer 5 minutes. Stir in alfredo sauce and turn off heat.
3) in large bowl combine shredded cheeses
4) Spread 1/4 of artichoke mixture in bottom of baking dish, top with 3 noodles. Sprinkle with 3/4 heaping cup of cheese. Repeat layers twice. Spread remaining artichoke mix on top and sprinke with remaining cheese.
5) cover and bake 40 minutes. Uncover and bake 15 minutes more. Remove from oven and let stand for 15 minutes before cutting.
I can’t eat onions or garlic but I bet they would taste great in this. You could try adding a 1/2 cup chopped sauteed onion to the broth before boiling it or a couple sauteed cloves of garlic. But honestly this was one of if not the BEST lasagnas I have ever had. It was soooo good .
