Oven Fried Chicken with Homemade Honey Mustard Sauce
Prep Time: 15 mins
Cook Time: 40 mins
Serves: 8
Ingredients for chicken:
8 skinless, boneless chicken thighs
2 large eggs
1/4 cup milk
1 1/2 cups plain bread crumbs
1 tsp paprika
1/4 cup vegetable oil
1 cup flour (all-purpose)
Kosher salt, to taste
black pepper, to taste
Ingredients for Honey Mustard Sauce
1/4 cup mayonnaise
1 tbsp. mustard
1 tbsp. Dijon mustard
2 tbsp. honey
Instructions:
Preheat oven to 375 degrees.
Prepare a baking sheet or 9″x13″ glass pan by spraying with nonstick spray. As an alternative, you can line with parchment paper or silicone baking mat for easier cleanup. Set aside.
In a small bowl, prepare the Honey Mustard Sauce by mixing together the mayonnaise, mustards, and honey.
Stir well and set aside.
Season the chicken thighs with salt and pepper.
Add flour to a medium bowl.
Using a medium bowl, mix together the eggs and milk.
In a large bowl (for room to reach in and press chicken), mix together the bread crumbs, paprika and vegetable oil. (It may seem like it is the wrong amount of oil to crumbs, but it isn’t). Season with salt and pepper and stir together until mixed thoroughly.
Set up an assembly line of the flour, the egg mixture, and the bread crumb mixture.
Working with one thigh at a time, dredge the chicken in the flour. Dip in the egg mixture and then into the bread crumb mixture. Press each side slightly so that it coats good.
Place onto the prepared baking sheet or pan. Bake, uncovered, for approximately 35-40 minutes or until chicken is cooked through and crust is golden brown.
Serve with the Homemade Honey Mustard Sauce as a dip.
As an alternative to dip, you can serve on a bed of the Homemade Honey Mustard and drizzle a bit over the top.
Enjoy!
