Pineapple Upside Down Mug Cakes for a Scrumptious Treat!

Pineapple is a favorite of mine! I love to eat just pineapple by itself. I love it on pizza and my very favorite is Pineapple Upside Down Cake! However, with just two of us in the house, it is hard to eat a whole cake. So, it seems I rarely have a chance to have it. That is until I discovered Pineapple Upside Down Mug Cakes for two! Now, we can have a fresh pineapple dessert anytime the mood hits!

Pineapple Upside Down Mug Cakes Recipe

Prep Time: 1 min 30 secs
Cook time: 1 min 30 secs
Yield: 2

Ingredients

Pineapple Upside Down Mug Cakes ingredients

1/4 cup crushed pineapple in juice
2 tablespoons light brown sugar, firmly packed
1/2 cup dry yellow cake mix
1 1/2 cups Reddi-wip Original Dairy Whipped Topping
1 egg
Maraschino cherry, cut in half

Directions

Spray the insides of 2 large microwave-safe mugs with cooking spray.

Divide the crushed pineapple between the mugs.

Divide the brown sugar between each mug. Set the mugs aside.

Mix together cake mix, Reddi-wip, and egg in a medium bowl.

Divide batter between the two mugs.

Individually, microwave each mug for approximately 1 minute 15 seconds to 1 minute 30 seconds until set, being careful not to overcook or they will become spongy.

Remove from microwave and loosen around the edge with a butter knife. Then invert onto a plate. Do this for both mugs.

Top each cake with a cherry.

Serve while warm with additional Reddi-wip on the side, if desired.

Store unused dry cake mix in baggie or sealed jar for fun desserts later!
