Have you ever tasted cured and smoked Italian ham?  Speck Alto Adige creates a delicious ham that is lightly smoked and cured in the fresh air in the mountainous area of South Tyrol, Italy.

I recently received a nice pack of Speck Alto Adige ham to taste and I instantly started thinking of fun and creative ways to use the ham.  My first instinct was to create a delicious breakfast casserole for my family, as we are huge breakfast food eaters!

As you can see, Speck Alto Adige ham comes in a nice sized block style so you can slice it as thinly or thickly as you like.  For my breakfast casserole, I cut the ham a little thicker, making it easier to cube after cooking and place into the casserole mixture.

The recipe is simple and easy to follow, but requires two steps to make.  Below will be detailed instructions on how to create this easy and delicious breakfast dish that your entire family will enjoy.  Adding the unique flavor of Speck Alto Adige ham give it a robust and full flavor that my family loved and devoured rather quickly.

This recipe is a two-step process and requires prep in the evening, allow the casserole to cool and marinate overnight and them pop in the oven the next morning.
Ingredients
  • 9 XL - Eggs
  • 1 cup - sharp cheddar cheese
  • 1.5 cups - 2% milk (or your flavor preference)
  • 6 slices - Speck Alto Adige Ham, thicker
  • 4 slices, thick sourdough bread
  • Salt & pepper to flavor
Instructions
  1. The night before:
  2. In a greased or butter-sprayed 9x9" casserole dish, tear apart bread pieces and line the entire bottom of your dish. Set aside.
  3. Slice of 5-6 slices of thick cut Speck Alto Adige Ham and fry in a skillet for 2-3 minutes (each side) until it is fully cooked. Trim off the top layer of fat (after cooking as this makes it easier, softer and you get the full flavor of it while cooking) and then cube your ham slices, set aside.
  4. In a separate mixing bowl, add eggs, milk, cheese and salt & pepper (to taste). Once the eggs are completely mixed, add in the ham cubes and continue mixing until eggs.
  5. Pour egg and ham mixture atop of the bread-lined pan and cover.
  6. Place casserole in fridge overnight, allowing it to marinate and absorb into the bread.
  7. The next morning:
  8. Preheat oven to 375 degrees. Once over is ready, place casserole in oven and bake for 25-30 minutes or until your eggs are complete cooked on top.
