Cheesy Crock Pot Potato Soup: A Creamy, Delicious Comfort Food!
When the weather starts cooling down, it’s the perfect time for soothing comfort foods! And, I can never seem to escape the weather change without getting a major case of the sniffles! Whether it is the cool air or being sick, there is nothing I love better than a nice hot creamy bowl of soup to help me feel better. One of my favorites is this easy Cheesy Crock Pot Potato Soup Recipe!
This recipe is super easy and all done in the slow cooker! Simply, put it on in the mornings and by evening, you have a yummy creamy soup to come home to! I love mine with a crusty buttered piece of french bread, but it is equally good with crackers. For those that want a more rounded meal, serve it with a side salad and/or fruit.
Cheesy Crock Pot Potato Soup
Prep Time: 10 mins
Cook Time: 8 hours
Ingredients:
5 cups diced peeled potatoes (I used 6 medium potatoes)
1 1/2 cups chopped onions
1 carton chicken broth (32 oz carton or 4 cups)
3 Tbls. cornstarch
6 slices American cheese
3-4 green onions, optional for topping
shredded cheddar cheese, optional for topping
1 Tbls. salt, or to taste
3/4 tsp pepper, or to taste
Instructions:
Spray crock pot with cooking spray.
Dice potatoes and onions and add to crock pot.
Season with salt and pepper.
Add chicken broth, reserving 1/4 cup. Cover and refrigerate to use later.
Cover crock pot with lid and cook on LOW for 8 hours.
Increase the heat setting to HIGH.
Using the reserved 1/4 cup of chicken broth, beat in cornstarch until smooth. Add to the crock pot and stir well. Cover and continue cooking another 15 minutes or until thickened.
Tear cheese slices into squares and stir into the potato mixture until well melted.
Serve with a sprinkle of green onions and shredded cheese if desired.
Serve with your favorite crusty bread or crackers.

Like bacon? Crumble some cooked bacon on top, along with green onions.

It will make approximately 6 good sized bowls for sure. It could be more or less depending on bowl size.
