Stuffed Pepper Jack-o-Lantern
With Halloween this week, you are probably looking for a fun, yet easy, recipe to make. These super cute Stuffed Pepper Jack-o-Lanterns certainly fit the bill! With just 5 ingredients and a little bit of time, you can make your own edible Jack-O-Lanterns. They are sure to be a hit with your family, whether it’s for your family night dinner or if you make a big batch for a party!
Stuffed Pepper Jack-o-Lantern
Serves: 5
Ingredients
- 5 Peppers (orange, yellow, green, or red)
- 1 box Rice-a-Roni Spanish Rice
- 14.5 oz. can Hunt’s Stewed Tomatoes
- 2 tbsp. Unsalted Butter
- 1 lb. Ground Beef
Instructions
- Stirring and chopping frequently, cook ground beef at medium heat on stovetop for 18 to 20 minutes or until cooked through. If desired, add diced red onion to beef and sauté for 5 to 8 minutes. Remove from heat.
- Following the step-by-step directions on your Rice-a-Roni Spanish Rice box, combine rice and butter. As directed, cook on stovetop until golden brown. Add water (2 cups), seasoning, and stewed tomatoes to stovetop. After brought to a boil, cover stovetop pan and reduce heat to low for 15 to 20 minutes.
- Cut an inward circle at the top of each pepper. Holding the stem, pull the top from each pepper. Set aside. Carefully pit each pepper and remove seeds. Rinse inside of each pepper. Pat dry.
- Using a small kitchen knife (or you can use an X-ACTO knife), carefully cut out triangular eyes and a nose, and a crooked mouth (or whatever face you desire).
- Stuff each pepper with Rice-a-Roni Spanish Rice (with beef).
- Serve with lid on top or at side. Enjoy!

This is an adorable meal that’s perfect for Halloween! I’ve seen similar recipes to this, but I believe they bake the peppers after carving the faces. It distorts them a little bit, but I think some people just prefer theirs roasted. I know I would have to roast mine before filling them with rice, simple because I like my pepper cooked! But this meal looks absolutely adorable and delicious! There’s all kinds of different rice you could use that would work in this recipe too. Thanks for sharing this yummy recipe!
